Well I guess its that time of year again, time for another blog… Christmas season!
The Townsite Brew Crew is gearing up for the holidays at home this year, except dear Uli who has up & gone to Australia for a month. He’s trading in the rain&cold weather for rain&warm weather.

Since we are cooking turkeys in our own kitchens we thought, what better way to celebrate than with a beer paired dinner! Here’s what Brewery Manager Chloe Smith has come up with:

Course 1. Beer– open your favorite Townsite brew, fill a glass, put on your apron and get cookin’

Course 2. Westview Wheat Cranberry Sauce:
This one is super simple: get out a pot. Put the following in said pot:
1C Westview Wheat
12 Oz fresh Cranberries
1C Sugar
1C Orange Juice
Zest of ½ an orange
Bring to a boil and simmer 15 mins until Crans are the consistency you desire. Place in a bowl and refrigerate until dinner is served.

Course 3. Perfect Storm Stout & Mushroom Gravy:
This one is slightly more complicated:
-3TBSP butter
¼ C chopped onion
8 Oz chopped Mushrooms (fresh Chanterelles would be my suggestion)
1/4C flour
1 C Stock (beef or veg you choose)
¾ C Stout
¼ Heavy cream
Saute onions in butter until soft. Add Mushrooms & cook until soft. Sprinkle with flour & cook until flour is browned. Add stock & stout, simmer until thickened. Add cream and stir to combine. S&P to taste.

Course 4. Charleston Triple
This isn’t so much a course as a tip. Charleston is the white wine of beer, at 9% alcohol it is dry and effervescent- The perfect pairing for turkey dinner.
