We brew our regular 7800 Saison with a Belgian Saison yeast and a blend of malt, rye, spelt, and raw wheat. The beer was then sent to spend six months in the foeder. We then added three kinds of wild yeast as well as 250L of Saison from one of our aged barrels from 2018. The result is a wonderfully refreshing light-bodied Saison with complex funky notes finishing dry, allowing the bitterness and the tartness to come forward in a beautifully balanced way.
